IT may soon be Guy Fawkes but we are inviting the Manchester food and drink trade to the Northern Monk Refectory on Tuesday 5th November (3pm-6pm) to try French cheeses matched with beer. It is sure to be an explosive experience!
Cheese specialist, The Cheese Explorer founder Emma Young will hold a Masterclass and lead you on a journey of discovery on the art of cheese making, followed by a guide on how to taste cheese.

She will then tantalise the tastebuds with how beer, with its bitterness and fruity hops, really does compliment eight cheeses carefully selected from the French regions of Normandy, Burgundy, Les Causses (Massif Central) and Savoie.
Cheeses to explore on the day will include Camembert, Epoisses, Tomme de Savoie, Beaufort, Bleu des Causses and Emmental.
“Beer and cheese offer a pairing as delightful as the classic cheese and wine—perhaps even more intriguing, as it’s far less common!” says Emma, founder of the Cheese Explorer.
The cheeses will be matched with a choice of beers from Northern Monk. The brewery launched Faith in 2015, and says it is “arguably the best core pale ale in the county “. It was one of the first in the New England style to launch in the UK.
Faith is still its shining light.
Northern Monk was also the first English brewery to win a medal in the IPA category at the World Beer Cup with its Eternal beer.

Emma Young is an international cheese judge and certified cheese professional (CCP). She has worked in the cheese industry since 2009 – including cheesemaking.
She regularly travels the world exploring all things cheese. She has worked with producers in countries as diverse as Lebanon to Saudi Arabia and is now highlighting French cheese and its versatility in matching with beer.
She teaches cheese courses for MonS Formation in France & the Guild of Fine Food and the Academy of Cheese in the UK.
What can you expect?
Restaurateurs, food, and drink specialists in the Manchester area will be taken on a cheese and beer journey that will really increase their understanding of cheese and drinks pairings.
For example, they will learn how Tomme De Savoie, with its simple, buttery, creamy, fruity, and earthy flavours pairs with pale ales.

Or why Bleu des Causses PDO, a high moisture, high intensity blue cheese with spicy, peppery notes, penetrating through its buttery, sweet milk base, is ideal to match with a fruit beer or chocolate stout.
Will Epoisses PDO handle well with a bold IPA?
Places are limited – email emma@thecheeseexplorer.com to attend.
This is a trade event.
