Thornton Hall Hotel appoints new Head Chef


CHESHIRE: Ben Mounsey has returned to the renowned Thornton Hall and Spa as Head Chef.

He will oversee The Lawns Restaurant, bringing his passion for quality ingredients combined with exact techniques and creative flair, to its menus.

The 3 AA Rosette restaurat for fine dining, in the heart of the Wirral, has recently undegone major refurbishment.

Mounsey and his team initially plan to focus on improving the gourmet and tasting menus and gradually introduce new dishes that marry the appetite for good, honest, food with the fine dining experience diners at the hotel have come to expect.

Aged just 28, Mounsey used to work at the hotel’s restaurant as sous chef before embarking on a year-long tour of the Far East.

On his return he spent two years as Sous Chef at Fraiche in Oxton.

With a degree in Culinary Arts Management from Birmingham University, he brings over 12 years’ experience in the industry to the Head Chef role – a far cry from a pot washer at the tender age of 16.

“I’m really looking to build on the fantastic standard of dining The Lawns is renowned for,” he said.

The hotel has also promoted Andrew Richards to the role of Executive Chef across the hotel’s entire dining offer in a reorganisation of its kitchen structure.

Richards has worked at Thornton Hall Hotel for five years, working his way up from junior Sous Chef.

He will oversee the running of the hotel’s dining offer, including The Brasserie/Tapas & Grill, The Lawns and the hotel’s events and functions, including weddings and dinners.

“The dining offer at the hotel is constantly evolving and I’m looking forward to growing the food operation. From The Lawns and The Brasserie to our Great Wirral afternoon teas and the banqueting.

“We will be maintaining and improving all areas of the dining offer in order to guarantee that our customers remain at the core of what we do.”

The Lawns Restaurant is open Monday – Sunday and serves lunch, dinner and afternoon tea. The Brasserie offers tapas and grill and is open daily for brunch, lunch and dinner.
